The Criollo, Spanish Cattle in the Americas by John E. Rouse.  University of Oklahoma Press, 1977.  This book is the cornerstone book about Criollo.  A book review found on Amazon.com follows:

Rouse was an engineer by trade, but had a genuine passion for studying cattle. As global climate change forces more and more livestock production into marginal lands, the few surviving criollo (Spanish colonial) types of cattle will be a treasure beyond price if they can be saved and redeveloped. One type, the chinampo of Baja California, can eat and digest prickly pear cactus without the spines having to be burned off first. Anyone interested in humanity's future food supply would do well to read this book carefully. We are currently allowing priceless genetics and environmental adaptation to be bred out of existence.
